PASSION FRUIT MARTINI
2 ripe passion fruit halved
vanilla vodka
1 tsp passoa liqueur or more
1 tbsp lime juice
1 tbsp sugar syrup
prosecco to serve
Scoop the seeds from one of the passion fruits into the glass of a cocktail shaker, add the vodka, passoa, lime juice and sugar syrup. Add a handful of ice and shake well, strain into 2 martini glasses, top up with prosecco, then add half a passion fruit to each. Serve immediately.
PINEAPPLE PASSION FRUIT CHEESECAKE
For the base
10 digestive biscuits
6 ginger nut biscuits
For the filling
2 pkts full-fat soft cheese
3 large eggs, beaten
Small pot double cream
5 oz. caster sugar
zest of 3 limes
For the topping
medium, ripe pineapple pureed
3 ripe passion fruits halved
pot double cream
1 tbsp icing sugar
Crush the biscuits in a bowl and mix in the melted butter. Spoon the crumbs into a springform tin and press down with the back of a spoon. Bake for 10-15 mins until lightly browned, then cool.
Beat the filling ingredients in a large bowl until smooth, pour onto the cooled biscuit base and return to the oven for 50 mins to 1 hr until the filling is just set and starting to brown. Leave to cool in the oven with the door slightly open, then chill in the fridge. Carefully remove from tin and transfer onto a serving plate. Top the cheesecake with the whipped cream and icing sugar, then pour the pineapple compote and crown with the pulp and seeds of the passion fruit.
HEAVENLY BREAKFAST SMOOTHIE
3 passion fruit
1 banana chopped
1small mango, peeled, stoned and chopped
orange juice
ice cubes
Scoop the passion fruit pulp into a blender and add the banana, mango and orange juice. Purée until smooth and drink immediately, topped with ice cubes.
SALSA
2 passionfruit
1/4 English cucumber, chopped finely
2 tablespoons chopped finely red onion
1 tomato
Avocado if desired
Juice of 1 lime
1/4 cup chopped coriander
1 Jalapeno sliced thinly
Pinch sea salt
White pepper
Chop and mix all the vegetables together. Season with salt and pepper. Add a finely chopped red chilli and then top with the scooped out pulp and seeds of the passion fruit.
