Explore a delightful holiday treat with these pistachio cream cheese cookies. Initially offering a subtle savory note, they gradually unfold into a delightful sweetness. The texture perfectly blends softness and density, delivering a burst of flavor with every bite. I stumbled across this recipe while searching for a fun new recipe for Thanksgiving, and it was a hit!
INGREDIENTS:
Two sticks of butter (1 cup)
10 ounces of cream cheese
1.5 teaspoons vanilla extract
One teaspoon of all-purpose white flour
One egg
½ teaspoon salt
One package of pistachio pudding mix
¾ cup pure granulated sugar
½ cup of chopped pistachios
OPTIONAL:
Milk chocolate chips
Cream cheese icing
STEP ONE
Preheat the oven to 350 degrees Fahrenheit.
STEP TWO
Place the ingredients—softened butter, a block of cream cheese and sugar—into a bowl and mix them well together.
STEP THREE
Combine until smooth. Add the vanilla and egg and continue to mix until you get a creamy consistency.
Incorporate the dry ingredients: a box of pistachio pudding mix, flour, baking powder and salt.
Stir in chopped pistachios.
Use a cookie scoop to form batter balls and place them on baking sheets.
Bake for 15 minutes; they should be slightly soft to the touch with a subtle browning at the edges.
Allow a five-minute cooling period on the baking sheet before transferring it to a wire rack.
Now, for various finishes, consider dipping some cookies in melted chocolate, adding cream cheese icing to others and leaving some plain. The choice is entirely yours.
