New Food Trucks Popping Up: 1856, Capital Tacos, and Sweets on a Roll

We are in a recession, and therefore many new restaurants are starting small in the form of food trucks. Two new food trucks in Brooksville are 1856 and Capital Taco. Then there is Sweets on a Roll, an ice cream truck servicing several areas of the county.

The 1856 food truck is a nod to the establishment date of Brooksville. The truck serves barbecue fare. Much of the food is made in a smoker on the food truck. Another acknowledgment of the history is that the truck is located near the location of Fort DeSoto, a Second Seminole War US Army Fort. We sampled their brisket and ribs, and they were moist and flavorful. The 1856 Food Truck is located at the Corner of Croom Rd & McIntyre Road.
The 1856 food truck is just the beginning. The plan is to build a restaurant and microbrewery at that location. The 1856 food truck is having its grand opening this Friday, the 13th.

Capital Taco is a fast-growing Taco chain started in Florida. It has both restaurants and food trucks in its array of food venues. They offer TexMex fare, including tacos, burritos, and empanadas. We tried their beef burrito and were surprised that it included seasoned fries in the filling. It is located in the parking lot of the shopping center with Harbor Freight, Big Lots, and Applebee’s in Brooksville.

Sweets on a Roll is a husband and wife operation. Ashley and Alan Lehman recently moved to the area and purchased an ice cream truck.
“We are super excited to start our new adventure with our pre-packaged ice cream truck,” said Alan Lehman. We will carry all ice cream novelty, snacks, and drinks as well!! We will be servicing Spring Hill, Brooksville, and events in Pasco!! We are also available for parties or private events!!

These food trucks are an exciting addition to our community. It is exciting to see entrepreneurs finding a way to open new businesses even during a recession.
