Dining Out: Nouvelle Cuisine

Belgian – French Fine Dining

Way back in 1999, a couple came to Spring Hill and opened a restaurant. That restaurant is called Nouvelle Cuisine.

Housed in a quiet, unassuming stretch of shops set off Spring Hill Drive, its unassuming exterior belies what delights are inside.

Owners, Chef Jan Kinds and his wife, Isabelle Roos, hail from Bruges in Belgium. Kinds learned his craft growing up in the family restaurant in his native Belgian town of Bruges and specializes in delicious Belgian and French cooking like Coquille St. Jacques, Dover Sole and Steak topped with traditional Belgian sauces.



Nouvelle Cuisine’s menu includes entrees such as duck, quail, Chateau Briand, pork, veal and scallops and more. All good food is worth waiting for and Nouvelle Cuisine prepares each dish to order.

In addition to the menu, Nouvelle Cuisine also offers a selection of speciality entrees like Mussels Provencale, Filet Mignon with Roquefort Port Sauce, Pork with Apple Brandy Sauce, and Lobster Duglere. There’s also specialty appetizers and home made soups. But their pièce de résistance is the Gratin Dauphinois — the classic French potato gratin dish made with thinly sliced potatoes, cream and Gruyere cheese.

Another French classic served at Nouvelle Cuisine is the Chateau Briand. Chateau Briand is a meat dish cooked with a thick cut from the tenderloin filet and served with a sauce prepared in a series of reductions.

I like dining here and as often as possible and have never, ever been disappointed. Its interior, in golds and greens, is elegant, comfortable and welcoming.

My favorite was always the rack of lamb. Outstanding.

But I can recommend just about everything - either for lunch or dinner -seafood crepes, chicken cordon bleu, smoked salmon to name a few. The monkfish entree is superb too with its mild curry sauce and caramelized onions.

Wines and Belgian beers are available including: Duvel, kwak, Kasteel… each in its own unique glass, and a dessert selection including Creme Brulee, Mascarpone Cheesecake, Chocolate Mousse, Apple Tart, Lemon Tart, Bread Pudding, Coup Advokaat.

Nouvelle Cuisine is a fine destination if you’re looking for a European culinary experience. It serves fine food but can be a little pricey for some.
